Before the differences, it helps to see how alike they’re:

Both issuers say each token is backed by reserves, and both publish attestations on those reserves. Where they differ is in how they’re perceived.
USDC is generally regarded as the more transparent and tightly regulated of the two, with reserves held mainly in cash and short-term US government debt. USDT is larger and more liquid across more markets, and it also publishes attestations, but the detail and make-up of its reserves have been debated for longer.
